PESCADO AL VAPOR 
Steam (“vapor”) is the inspiration for this dish, a seared fillet of fish with a savory roasted corn-tomatillo sauce inside (which will slowly infuse the filet), steam-cooked in corn husk wrapper. Served with quinoa-wild rice pilaf, “The Wharf” vegetarian style salad (cucumber, avocado, spring mix, tomatoes, hard-boiled eggs, and side of Thousand Islands dressing), and fruit salad.
